The research was conducted experimentally using a Completely Randomized Design (CRD) with five treatments: P0 (without CRFO), P1 (15 ml), P2 (20 ml), P3 (25 ml), and P4 (30 ml), each with three replications. Organoleptic evaluation was carried out by 30 panelists assessing color, aroma, taste, tenderness, and overall acceptability using a five-point hedonic scale. The results showed that the addition of CRFO had a significant effect (P &lt; 0.05) on color, but no significant effect (P &gt; 0.05) on aroma, taste, tenderness, and overall acceptability. The highest mean preference scores for color were observed in treatments P1 (15 ml) and P2 (20 ml), while for other attributes, panelists tended to give favorable ratings (“like”) within the concentration range of 20–25 ml. However, its chemical characteristics and active component content have not been widely reported. Therefore, this study aims to determine the chemical properties and active components of the resulting red fruit oil microencapsulates. This study aims to determine the chemical properties and active components of the microencapsulated red fruit oil produced. The research was conducted in two stages: (1) the production of microencapsulated degummed red fruit oil through emulsification and drying processes, and (2) the analysis of the chemical properties and active components of the resulting microcapsules. The formulations used involved different ratios of maltodextrin and water: M1 (16% : 59.5%), M2 (17% : 58.5%), M3 (18% : 57.5%), and M4 (19% : 56.5%). The results showed that microencapsulated degummed red fruit oil with a 20% oil concentration could be produced using maltodextrin as the encapsulating agent in the range of 16–18%. This study aims to determine the quality of refillable drinking water produced by the Refillable Drinking Water Depot (DAMIU) in Manokwari Regency based on the quality standard of the Minister of Health of the Republic of Indonesia No. 2 Tahun 2023. The study was conducted in March-April 2023, and the method used was quantitative descriptive. Refillable drinking water samples were obtained by purposive sampling of 20 samples from 5 District areas in Manokwari Regency. This study was a descriptive qualitative study using a documentation method which tried to potrait the situation in the place. Data were collected using purposive sampling technique and analyzed using descriptive method. The use of purposive sampling technique was to ensure that the data contained significant amount of verbal information and that they addressed environmental health issues.
